History
Cake decorating started 20 years ago in my life when I began to decorate my children's birthday cakes. The mother's of my children's friends began to ask me to make their children's cakes and it was right there where my business in cake decorating started. Later I took classes in formal cake decorating and learned how to make those beautiful flowers which look like the real ones

Variety
I make fruit, carrot and sponge cakes eg. chocolate, chocolate mousse, vanilla etc. My favourite cake is the fruit cake, because time is on my side.( Time is the most important factor that plays a role when you want to create a piece of art!)

Shapes
A square cake is easier to cut than a round or funny shape. A funny shape on the other hand is more interesting.

Chocolate dangers
South Africa's summers are HOT! Chocolate decorations can be a problem in the heat.

When you choose flowers
Real flowers can wilt.. Icing sugar flowers will look like real ones, but can of course not wilt. Real flowers can either be sprayed with poison or it can have lice on. Icing sugar flowers can on the other hand break easily. You must be careful when you handle them.

Use your imagination
Be creative when you choose your wedding cake. A normal 3 layered cake with pillars in-between is not the only idea! Use your imagination and build your cake around a theme e.g Africa, butterflies, fairies, roses etc

More portions from a fruit cake
Although fruit cake is more expensive, you can cut more pieces from it. A 30x30cm square sponge cake will feed approximately 64 people, where a fruit cake, which is cut into smaller pieces will be able to feed 100 to 120 people! (Even more, depending on the way you cut it).

Fruit Cake lasts longer
Left over sponge or carrot cake must be eaten within a day or two, where the fruit cake can be eaten after your honeymoon or even a year later!

Cup Cakes
Cup cakes, truffels etc seems to be a brilliant idea, but it has its problems. Firstly they look beautiful from nearby, but not exiting from further away.

Dummy cake
A chocolate cake or even a dummy with truffels can be a great idea!
